freshly grated Pecorino Romano cheese

finely chopped fresh rosemary

Instructions
Preheat oven to 400°F. Slice tops off garlic bulbs, drizzle with olive oil, and wrap in foil. Roast for 30 minutes until golden.
Squeeze roasted garlic into a bowl and mash with salt and pepper; set aside.
Peel and cube potatoes. Boil in salted water for 15-20 minutes until tender. Drain.
Mash potatoes with olive oil until creamy. Stir in roasted garlic, Pecorino Romano, rosemary, salt, and pepper.
Adjust consistency with more olive oil if needed. Garnish with olive oil and Pecorino to serve.
