Ingredients
  

  • 2 bulbs fresh garlic
  • Olive oil for roasting and drizzling
  • 2 pounds red potatoes
  • cup extra virgin olive oil plus more as needed
  • ½ cup freshly grated Pecorino Romano cheese
  • 1 teaspoon finely chopped fresh rosemary optional
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F. Slice tops off garlic bulbs, drizzle with olive oil, and wrap in foil. Roast for 30 minutes until golden.
  • Squeeze roasted garlic into a bowl and mash with salt and pepper; set aside.
  • Peel and cube potatoes. Boil in salted water for 15-20 minutes until tender. Drain.
  • Mash potatoes with olive oil until creamy. Stir in roasted garlic, Pecorino Romano, rosemary, salt, and pepper.
  • Adjust consistency with more olive oil if needed. Garnish with olive oil and Pecorino to serve.
