Ingredients
  

  • 1 lb kielbasa sausage sliced into rounds
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups green cabbage chopped
  • 3 large carrots sliced
  • 3 medium potatoes diced
  • 6 cups chicken or vegetable broth
  • 1 can 14.5 oz diced tomatoes, with juice
  • 1 bay leaf
  • 1 teaspoon smoked paprika optional
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • In a large pot, cook the kielbasa over medium heat until browned. Remove and set aside.
  • Add the onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
  • Add cabbage, carrots, potatoes, diced tomatoes (with juice), bay leaf, and smoked paprika.
  • Pour in the broth, stir, and bring to a boil. Reduce heat and simmer for 25-30 minutes until vegetables are tender.
  • Return the kielbasa to the pot, season with salt and pepper, and heat through.
  • Remove the bay leaf, garnish with parsley, and serve warm.
