Ingredients
  

  • Main Ingredients
  • 1 tablespoon olive oil or butter
  • 1 lb kielbasa cut into ½-inch pieces
  • 2 garlic cloves minced
  • ½ cup yellow onion finely diced
  • ½ cup carrots finely diced (about 2 large carrots)
  • ½ cup celery finely sliced (2-3 stalks)
  • 4 cups chicken stock
  • 1 ½ lbs potatoes cubed
  • 2 cups heavy cream or whole milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded Parmesan cheese
  • Seasonings
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped parsley

Instructions
 

  • Cook the SausageHeat olive oil in a large soup pot. Add kielbasa and cook for 5-6 minutes, stirring often. Remove and set aside.
  • Sauté VegetablesAdd garlic, onion, carrots, and celery to the pot. Sauté for 2 minutes.
  • Cook the PotatoesPour in chicken stock and add potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes until tender.
  • Add Cream and CheeseStir in milk (or cream), cheddar cheese, Parmesan cheese, salt, and pepper. Add the cooked kielbasa. Cook on low for 5-10 minutes until creamy.
  • Garnish and ServeStir in parsley just before serving. Ladle into bowls and enjoy warm.
