Ingredients
  

  • For the Crust:
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • For the Lemon Cream Cheese Filling:
  • 1 8 oz package cream cheese, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 2 tablespoons lemon zest
  • ¼ cup freshly squeezed lemon juice

Instructions
 

  • Preheat and Prepare : Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper or lightly grease it.
  • Make the Crust : In a large bowl, beat butter, sugar, and vanilla until creamy. Add flour and salt; mix until combined. Press the mixture into the bottom of the prepared pan.
  • Bake the Crust : Bake for 15-20 minutes or until lightly golden. Remove from oven and let cool slightly.
  • Prepare the Filling: In a bowl, beat cream cheese and powdered sugar until smooth. Add egg, lemon zest, and lemon juice; mix until well combined.
  • Assemble and Bake: Pour the lemon cream cheese mixture over the slightly cooled crust. Bake for another 15-20 minutes or until the filling is set.
  • Cool and Serve: Allow to cool completely, then refrigerate for at least 1 hour before slicing into squares.
