Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 3 medium carrots peeled and diced
  • 1 small sweet onion diced
  • 3 cloves garlic minced
  • teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 2 cups dried red lentils rinsed
  • 6 cups low-sodium chicken broth
  • 6 ounces kielbasa cut into small bite-sized pieces
  • ½ teaspoon salt
  • ½ tablespoon dried Italian herbs
  • 2 & ½ tablespoons lemon juice

Instructions
 

  • Heat olive oil in a skillet over medium-high heat. Sauté carrots and onion for 4-5 minutes. Add garlic and cook for 20 seconds. Season with red pepper flakes, salt, and pepper.
  • Transfer vegetable mixture to a 6-quart crockpot. Add lentils, broth, kielbasa, and salt. Stir and cover. Cook on low for 5.5 hours.
  • Stir in Italian herbs and lemon juice. Adjust seasoning as needed.
  • Serve hot with crusty bread or enjoy on its own.
