Ingredients
  

  • 4 cups uncooked elbow macaroni
  • 8 tablespoons 1 stick unsalted butter
  • 6 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 4 cups shredded cheese cheddar and mozzarella work great
  • 2 teaspoons salt
  • 2 teaspoons white pepper
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper optional

Instructions
 

  • Cook the Macaroni:Cook macaroni according to the package instructions until al dente. Drain well and set aside.
  • Make the Cheese Sauce:In a large pot, melt the butter over medium heat. Whisk in the flour to form a roux. Cook for 2 minutes, stirring constantly.
  • Add Milk and Cream:Slowly pour in the whole milk and heavy cream, whisking constantly. Bring to a gentle simmer and cook until the sauce begins to thicken, about 5 minutes.
  • Stir in Cheese:Reduce heat to low and stir in 3 cups of the shredded cheese until melted and smooth. Add salt, white pepper, paprika, and cayenne if using.
  • Combine with Pasta:Add the cooked macaroni to the cheese sauce and stir until all the pasta is coated.
  • Bake:Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13-inch baking dish. Sprinkle the remaining 1 cup of cheese on top. Bake for 25-30 minutes until bubbly and golden brown.
  • Serve:Let the Macaroni Cheese cool for 5 minutes before serving. Enjoy warm!

Notes

  • For best results, use freshly shredded cheese. It melts more smoothly into the sauce.
