Ingredients
  

  • For the Base:
  • 1 cup butter
  • ½ cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • For the Chocolate Topping:
  • 1 cup semisweet or dark chocolate chips
  • ½ cup peanut butter

Instructions
 

  • Line an 8x8-inch baking dish with parchment paper.
  • Melt butter and brown sugar in a saucepan over medium heat. Stir in vanilla, then mix in oats. Cook for 3-4 minutes.
  • Press half the oat mixture into the pan.
  • Melt chocolate chips and peanut butter in the microwave until smooth. Pour over the oat base and spread evenly.
  • Top with the remaining oat mixture, pressing gently. Drizzle any leftover chocolate on top if desired.
  • Chill for 2-3 hours before cutting and serving.
