Ingredients
  

  • Beets:
  • 1 pound cooked peeled, and sliced beets (about 3-4 medium beets)
  • Pickling Liquid:
  • 1 cup water
  • 1 cup white vinegar or apple cider vinegar
  • ½ cup sugar adjust to taste
  • 1 teaspoon salt
  • Spices:
  • 4-6 whole cloves
  • 1 teaspoon mustard seeds
  • 1 teaspoon peppercorns
  • Optional Flavor Enhancers:
  • Red onion slices a bay leaf, or fresh ginger slices

Instructions
 

  • Prepare the Beets : If using raw beets, wash and trim them, then cook by boiling, steaming, or roasting until tender (about 45 minutes to 1 hour). Once cooled, peel and slice them into rounds or wedges.
  • Make the Pickling Liquid :In a saucepan, combine 1 cup water, 1 cup vinegar, ½ cup sugar, 1 teaspoon salt, whole cloves, mustard seeds, and peppercorns. Add any optional ingredients if desired. Bring to a boil, stirring to dissolve the sugar and salt.
  • Combine Beets and Pickling Liquid : Place the sliced beets in a clean jar or bowl. Pour the hot pickling liquid over the beets, ensuring they’re fully submerged. Evenly distribute any optional flavoring ingredients.
  • Cool and Store: Allow to cool to room temperature. Cover and refrigerate. They’ll be ready to eat in a few hours but will continue to develop flavor over the next 24-48 hours.
  • Serve: Enjoy as a side, in salads, or as a tangy condiment!
