Prep the Oven: Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with nonstick spray.
Cook the Beef: In a large skillet, brown ground beef with onion over medium-high heat until fully cooked, about 10 minutes. Add garlic and cook another minute.
Make the Sauce: Stir in tomato sauce and Italian seasoning. Bring to a simmer and cook for 5 minutes, stirring occasionally. Season with salt and pepper.
Cook the Noodles: While the sauce simmers, cook the egg noodles according to package directions. Drain and set aside.
Mix the Creamy Noodles: In a large bowl, combine sour cream and cottage cheese. Add cooked noodles, season with salt and pepper, and stir to coat.
Layer the Casserole: Spread half of the creamy noodle mixture in the baking dish. Add half of the meat sauce, then layer with the remaining noodles and finish with the remaining sauce.
Add Cheese and Bake: Sprinkle grated cheddar cheese on top. Bake for 30 minutes, or until the cheese is melted and the casserole is bubbly.
Cool and Serve: Let cool for 10 minutes before serving.
