Ingredients
  

  • 1 pound lean ground beef
  • ½ yellow onion chopped
  • 2 cloves garlic minced
  • 2 cans 15 oz each tomato sauce
  • 1 teaspoon Italian seasoning
  • 8 ounces egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup grated cheddar cheese
  • Kosher salt and freshly ground black pepper to taste

Instructions
 

  • Prep the Oven: Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with nonstick spray.
  • Cook the Beef: In a large skillet, brown ground beef with onion over medium-high heat until fully cooked, about 10 minutes. Add garlic and cook another minute.
  • Make the Sauce: Stir in tomato sauce and Italian seasoning. Bring to a simmer and cook for 5 minutes, stirring occasionally. Season with salt and pepper.
  • Cook the Noodles: While the sauce simmers, cook the egg noodles according to package directions. Drain and set aside.
  • Mix the Creamy Noodles: In a large bowl, combine sour cream and cottage cheese. Add cooked noodles, season with salt and pepper, and stir to coat.
  • Layer the Casserole: Spread half of the creamy noodle mixture in the baking dish. Add half of the meat sauce, then layer with the remaining noodles and finish with the remaining sauce.
  • Add Cheese and Bake: Sprinkle grated cheddar cheese on top. Bake for 30 minutes, or until the cheese is melted and the casserole is bubbly.
  • Cool and Serve: Let cool for 10 minutes before serving.
