Ingredients
  

  • For the Stir Fry:
  • 2 boneless skinless chicken breasts cut into 1" pieces
  • ½ teaspoon garlic powder
  • Pepper to taste
  • 3 tablespoons cornstarch
  • 3 tablespoons olive oil divided
  • ½ medium onion
  • 2 cups broccoli florets
  • ½ red bell pepper
  • For the Teriyaki Sauce:
  • ½ cup chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar or apple cider vinegar
  • ¼ cup packed brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic minced

Instructions
 

  • Prep the ingredients by cutting the vegetables and chicken, and grating the ginger.
  • Make the teriyaki sauce by whisking all sauce ingredients in a medium bowl.
  • Toss the chicken with garlic powder, pepper, and cornstarch to coat.
  • Heat 2 tablespoons of oil in a skillet. Cook the chicken in batches until browned and cooked through. Transfer to a plate.
  • Sauté the onions in the same skillet, then add the broccoli and bell pepper. Cook for 3 minutes until tender-crisp.
  • Return the chicken to the skillet and add the teriyaki sauce. Stir until the sauce thickens and everything is coated.
  • Serve immediately, optionally with rice.
