For the Stir Fry:

boneless skinless chicken breasts
cut into 1" pieces

garlic powder
Pepper to taste

cornstarch

olive oil

medium onion

broccoli florets

red bell pepper
For the Teriyaki Sauce:
½
cup
chicken broth

tablespoons
mirin

tablespoons
soy sauce

teaspoon
rice vinegar
or apple cider vinegar

cup
packed brown sugar

tablespoon
cornstarch
1
teaspoon
grated fresh ginger

cloves
garlic
minced
Instructions
Prep the ingredients by cutting the vegetables and chicken, and grating the ginger.
Make the teriyaki sauce by whisking all sauce ingredients in a medium bowl.
Toss the chicken with garlic powder, pepper, and cornstarch to coat.
Heat 2 tablespoons of oil in a skillet. Cook the chicken in batches until browned and cooked through. Transfer to a plate.
Sauté the onions in the same skillet, then add the broccoli and bell pepper. Cook for 3 minutes until tender-crisp.
Return the chicken to the skillet and add the teriyaki sauce. Stir until the sauce thickens and everything is coated.
Serve immediately, optionally with rice.
