2 lbs ground beef 2 packages kielbasa sausage sliced 1 onion chopped 2 garlic cloves minced 4 medium baking potatoes diced 2 14.5 oz cans diced tomatoes, drained 2 15 oz cans pinto beans, with liquid 1 15.2 oz can whole kernel corn, drained 2 14.5 oz cans diced tomatoes with green chiles 1 10 oz package frozen mixed vegetables 4 cups water 2 teaspoons ground cumin 2 teaspoons chili powder Salt and pepper to taste
In a large Dutch oven, sauté onion over medium heat. Add ground beef and cook until browned.
Add sliced kielbasa sausage and cook for an additional 2-3 minutes.
Pour in all vegetables, beans, and tomatoes. Stir to combine.
Add seasonings and water, stirring to mix well.
Bring to a boil, then reduce heat to low and simmer for 1 hour.
Serve warm, garnished with fresh cilantro or shredded cheese if desired.
