Ingredients
  

  • 2 lbs ground beef
  • 2 packages kielbasa sausage sliced
  • 1 onion chopped
  • 2 garlic cloves minced
  • 4 medium baking potatoes diced
  • 2 14.5 oz cans diced tomatoes, drained
  • 2 15 oz cans pinto beans, with liquid
  • 1 15.2 oz can whole kernel corn, drained
  • 2 14.5 oz cans diced tomatoes with green chiles
  • 1 10 oz package frozen mixed vegetables
  • 4 cups water
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • Salt and pepper to taste

Instructions
 

  • In a large Dutch oven, sauté onion over medium heat. Add ground beef and cook until browned.
  • Add sliced kielbasa sausage and cook for an additional 2-3 minutes.
  • Pour in all vegetables, beans, and tomatoes. Stir to combine.
  • Add seasonings and water, stirring to mix well.
  • Bring to a boil, then reduce heat to low and simmer for 1 hour.
  • Serve warm, garnished with fresh cilantro or shredded cheese if desired.
