  • 2 cloves garlic minced
  • 2 cups potatoes peeled and chopped
  • 2 cans 14.5 oz each beef broth
  • 1 can 10 oz condensed tomato soup
  • 1 can 15 oz diced tomatoes
  • 16 oz frozen mixed vegetables
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil
  • 1 teaspoon salt

Instructions

  • Brown the Beef: In a large soup pot, cook ground beef, onion, garlic, and salt over medium-high heat until the beef is browned. Crumble the meat as it cooks. Drain excess fat.
  • Add Potatoes and Broth: Add potatoes, beef broth, tomato soup, and diced tomatoes (with juice). Stir to combine.
  • Add Vegetables and Seasonings: Add frozen vegetables, Worcestershire sauce, parsley, and basil. Season with additional salt and pepper.
  • Simmer: Bring the soup to a boil, then reduce to medium-low. Cover and simmer for 30-40 minutes until the potatoes are tender.
  • Serve: Ladle into bowls and enjoy warm.
