Italian sausage
cooked and rinsed

dried basil
or 4 minced fresh basil leaves

10 oz. package frozen spinach

Parmesan cheese
plus more for serving
Instructions
Heat olive oil in a large pot and sauté garlic until fragrant, about 1-2 minutes.
Add garlic to the chicken broth and bring to a simmer.
Stir in white beans and boil for 5 minutes. For a creamier soup, puree beans into the broth using a hand blender.
Add Italian sausage, diced tomatoes, spinach, and basil. Simmer for 10-15 minutes.
Serve hot, topped with Parmesan cheese. Enjoy!
