Ingredients
  

  • 1 teaspoon minced garlic
  • ½ teaspoon extra light virgin olive oil
  • 4 cups low-sodium chicken broth
  • 3 cups cooked white beans or one 15 oz. can, rinsed
  • 1 lb Italian sausage cooked and rinsed
  • 1 teaspoon dried basil or 4 minced fresh basil leaves
  • 2 cups diced tomatoes
  • 1 10 oz. package frozen spinach
  • 1 teaspoon Parmesan cheese plus more for serving

Instructions
 

  • Heat olive oil in a large pot and sauté garlic until fragrant, about 1-2 minutes.
  • Add garlic to the chicken broth and bring to a simmer.
  • Stir in white beans and boil for 5 minutes. For a creamier soup, puree beans into the broth using a hand blender.
  • Add Italian sausage, diced tomatoes, spinach, and basil. Simmer for 10-15 minutes.
  • Serve hot, topped with Parmesan cheese. Enjoy!
