Easy Cheesy Garlic Zucchini Steaks

Ingredients
  

  • - 4 large zucchinis sliced lengthwise
  • - 3 tablespoons olive oil
  • - 4 cloves garlic minced
  • - 1 teaspoon dried oregano
  • - 1 teaspoon dried basil
  • - Salt and pepper to taste
  • - 1 ½ cups shredded mozzarella cheese
  • - ½ cup grated Parmesan cheese
  • - Fresh parsley chopped (for garnish)

Instructions
 

  • 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    2. Arrange the zucchini slices on the prepared baking sheet.
    3. In a small bowl, mix the olive oil, minced garlic, oregano, basil, salt, and pepper.
    4. Brush the garlic mixture over the zucchini slices.
    5. Bake for 15-20 minutes until the zucchini is tender.
    6. Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the zucchini slices.
    7. Place under the broiler for 2-3 minutes until the cheese is melted and golden brown.
    8. Sprinkle with chopped parsley before serving.
