Ingredients
  

  • 1 lb ground beef
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 2 cups beef broth
  • 1 can diced tomatoes 14 oz
  • 1 cup frozen peas
  • 2 cups prepared mashed potatoes
  • Salt and pepper to taste

Instructions
 

  • Cook the ground beef in a large pot until browned. Add onion and garlic, sautéing until softened.
  • Stir in carrots and celery, cooking for 3-4 minutes.
  • Pour in beef broth and diced tomatoes, and bring to a simmer.
  • Add frozen peas and cook until heated through.
  • Season with salt and pepper. Serve hot, topped with mashed potatoes.
