Russet potatoes are cooked first – either baked or microwaved – chilled, then cut into cubes and smothered in a rich, creamy sauce and baked to perfection to make one of the most decadent potato casseroles you will ever taste.

5 – BUFFALO CHICKEN ENCHILADAS
BUFFALO CHICKEN ENCHILADAS – Spicy hot buffalo chicken meets Tex-mex enchiladas. Crockpot chicken, corn and white cheddar is tucked into corn tortillas and baked in a creamy, red-hot sauce. Takes care of two cravings in one!
Making enchiladas is a labor of love. There’s multiple steps to getting them in your belly. I usually recommend using a rotisserie chicken to save time but for this you need to cook it yourself. I made it easy for you by firing up the slow cooker.

For the longest time I resisted making this. Silly me. I mistakenly thought I wasn’t a fan of hot dips. And I was a little put off by the mayo in it – not because I don’t like it – but because the thought of baking it didn’t sound very appetizing.

7 – CHEDDAR CHILI CORNBREAD PIE
CHEDDAR CHILI CORNBREAD PIE – My favorite chili baked with a crusty cheddar cornbread topping! A happy marriage.
There’s ground beef, beans, corn, onions, peppers, tomatoes and lots of lovely warm spices to round out the chili. You can make it red pepper hot or not, it’s up to you.
The cornbread has cheddar cheese in the batter and on top too. There’s also fresh chopped onions and sour cream to help keep it moist. Not that it needs it, because baking the chili underneath it is the best way I know to keep it from being dry and crumbly. It soaks up some of the flavorful chili sauce as it bakes.

8 – BAKED MEATBALLS WITH PASTA IN PARMESAN SPINACH SAUCE
BAKED MEATBALLS WITH PASTA IN PARMESAN SPINACH SAUCE – Homemade meatballs baked on top of penne pasta smothered in lots of rich, creamy spinach sauce. This comforting pasta dish is perfect for serving on a special family night or bringing to a potluck or party.
The recipe starts by making the meatballs with ground beef, garlic, parsley, bread crumbs and egg. While they get busy baking halfway there’s time to boil the pasta and make the awesome sauce.
The sauce is made of chicken broth, half & half, spinach (frozen or fresh) and Parmesan cheese on top of the stove where it’s then pureed with a hand blender making the spinach front and center in every bite from the first to the last.

9 – BACON CHEESEBURGER RIGATONI
BACON CHEESEBURGER RIGATONI – Baked “cheeseburger” rigatoni pasta with a tangy barbecue sauce, cheddar cheese, bacon, pickles and tomatoes. It’s a little bit comfort food and a little bit rock ‘n’ roll.
This will not only liven up the routine of pasta night but burger night too. I had my doubts about combining these two favorites of mine into one. . . I never thought of barbecue sauce and pasta as belonging together.
I was wrong. All the things I love in a good burger work with pasta too, including pickles. All this does is trade one carb for another. In a deconstructed kind of way.

10 – CHICKEN ENCHILADA BAKE
I bet you thought I had hit on every enchilada recipe possible and run clean out of ideas but that just isn’t so. My ideas are never ending when it comes to the rock stars of the Tex-mex world!
So here is this chicken and rice bake with black beans and corn all held together by an easy homemade enchilada sauce and a crunchy tortilla topping.
It’s cheesy and hearty and promises to satisfy your strongest Tex-mex cravings.
The homemade enchilada sauce starts with onion and garlic, a little flour, chicken broth and tomato sauce plus lots of chili powder for seasoning. Cayenne pepper is optional for those who like it hot and spicy. And I do.
This is a great way to reinvent your chicken leftovers and rice too. If you don’t have leftovers you can use a rotisserie chicken and minute rice to save time. Or just bake off a couple chicken breasts while you prep the rest of the ingredients.
